I didn't use an exact recipe, but these turned out so well that I had to post. I have listed the ingredients from greatest quantity to least--exact measurements will depend on how much chicken you are cooking. Easy enough for a weekday meal, tasty enough for entertaining!
Marinade:
Pineapple juice/crushed pineapple
Soy sauce
Brown sugar
Franks sweet chili sauce
Minced garlic
Combine in saucepan and simmer but do not boil. Cut boneless, skinless chicken breasts into cubes, place in bowl, and cover with marinade. Cover and refrigerate for 1-24 hours.
Thread on skewers with fresh pineapple chunks and grill over medium heat.
